This recipe makes a very tasty Tex-Mex soup that will fill you up. It’s a wonderful soup for a cold winter day and it’s also perfect for your next game-day event.
Cowboys played an important part in the settling of the western United States. They worked on cattle drives, repaired fences and took care of the horses. Originally many cattle drives started in Texas and ended at the railroad in Kansas.
Cattle drives meant hard, hungry work. Cowboys would rise early in the morning and “guide” the herd to the next night’s stopping point. A herd of about 3,000 cattle usually meant around a dozen cowboys. Plus there was also a trail boss, a camp cook, and a wrangler whose job was to keep track of the extra horses.
Ingredients
2 Lbs Ground beef
4 Yukon Gold Potatoes
2 Cans Mixed vegetables undrained
1 Can Sweet corn undrained
1 Can Condensed tomato soup
1 Can diced tomatoes
1 Can Cut green beans undrained
Pinch Salt
Dash Pepper
2 Tablespoons Sugar
Instructions
Peel potatoes and cut into small cubes. Brown and drain ground beef. Place beef and potatoes in large slow cooker.
Add all cans of vegetables, can of tomato soup, and diced tomatoes. Salt and pepper to taste.
Finally, add the secret ingredient that sets this apart from your average soup- sugar!! Mix together well and cook on low for 2-3 hours in slow cooker.
Recipe Notes
Of course you can substitute fresh or frozen veggies, but would need to add a can or two of beef stock to this. No need to add this if using canned veggies, as you will be adding the cans undrained-which provides both liquid and flavor. 😋

How long do you cook this in the crock pot, and on what setting…high or low?

Tried this last night. Being at 5,280 feet makes a big difference. After 2 hours I took half of the soup out and put it in a large pot and cooked it for another 1 1/2 hours on high. Left the rest to keep cooking in the crock pot. Next time I would only use 1 1/2 lbs. ground beef and canned potatoes (or maybe parboil the potatoes first). Once everything was cooked it was very good.
How is this Tex-Mex? Just wondering if something was omitted from the ingredients list, because I see nothing that relates to Tex-Mex flavor.

Had no flavor, potatoes were still a little hard and I cooked it for four hours. I also added a small can of V8 juice. It didn’t help. Won’t be making this particular recipe again.

To have a Tex-Mex flavor substitute rotelle tomatoes for the canned tomatoes. This will add more flavor to the soup in a TexMex flavor.
I sautéed an onion and a clove of garlic with the meat. I used frozen vegetables: two 12 ounce bags of mixed vegetables, a 12 ounce bag of beans, and a 10 ounce bag of corn. Because I used frozen vegetables, I also added three cups of low sodium beef broth. My potatoes were kind of big, so I set the slow cooker on high for four hours. The soup was good, but as others said, a little bland. Next time, I will add some salt, cut the potatoes in smaller cubes, use more garlic, and add some seasoning, maybe thyme and a bay leaf. I may also add a can of beans, like kidney or cannellini.
