I make a similar salad all year round (but with less pepper). I really prefer apple cider vinegar or white balsamic which gives more flavour instead of the very mild white vinegar, but this is a personal preference. I was a little concerned about the amount of pepper, but it was good. You really can’t go wrong with this simple salad because it will complement most of the dishes you serve.

I’ve already made this salad twice. The first time, I left out the water and sugar, as one critic suggested, and voila! Big mistake! It was like sliced pickles. The second time, I followed the recipe and it turned out great! I added a little vinegar (about 1/8 cup). I should have followed the recipe to begin with. Oh, I also used olive oil instead of vegetable oil. It worked well. Great recipe!

It was SSSOOOOO good !!! I made a small portion to try it and ended up eating it all myself ! The only changes I made were to use white wine vinegar and only one tablespoon of olive oil. It tastes so refreshing. I can’t wait to make it for my family.

It’s great, but it doesn’t need sugar or water! Eliminate both and you’ll have a wonderfully fresh salad! Reduce the salt to 1 tsp… and also reduce the black pepper to 1 tsp (also remember to add a little garlic powder or fresh chopped garlic and feta cheese on top). Yummy! Thank you!

Super easy recipe. I love it. Following the advice of a few others and made with apple cider vinegar. Delicious. Also use a sweet onion since it is not specified. I found that the longer it marinated, the better it was. I prepared it early in the morning, and in the evening and the next day, it seemed to be at its best. I will definitely do it again. I have been making this recipe for many years now. I got it from an old Italian lady. She told me to put garlic in strips and leave it for a few days. New Zealand Health

I thought it was good. I made a few other similar salads on the site that I liked the salt, sugar and vinegar ratio better. However, I have never taken care of the raw onions in a salad, but the combination of dressing in this recipe works well with them. I reduced the recipe to 2 servings and marinated about 20 minutes before serving. For this amount, I used one unpeeled English cucumber and 2 large Roma tomatoes.

To make this recipe, you will need the following ingredients:

 

 

 

Ingredients:

3 medium cucumbers, peeled and sliced 1/4 inch thick
1 medium onion, sliced and separated into rings
3 medium tomatoes, cut into wedges
1/2 cup vinegar
1/4 cup sugar
1 cup water
2 teaspoons salt
1 teaspoon fresh coarse ground black pepper
1/4 cup oil
1 teaspoon chopped fresh mint (optional)

 

Directions:

1. Combine all ingredients in a large bowl.
2. Toss well to mix.
3. Refrigerate at least 2 hours before serving.
