I bet you’ve always wanted to make the Long John Silvers fish recipe, now you can with this imitation recipe. You can recreate this crispy fish paste at home.
Do you like this crispy fish covered in batter? Crispy on the outside, with the perfectly cooked fish on the inside, it’s hard to resist this fish. Growing up, it was one of my favorite restaurants. I remember the day Long John Silver’s opened in Pueblo, Colorado. My family got in the car and we quickly ate the fish.
It is very similar to the Fish and Chips that are served overseas. What makes this recipe unique is that the fish is crispy, but it is not made with a beer batter. Club soda is the key ingredient that makes this paste very special. The dough contains both baking soda and baking powder, and when combined with club soda it gives the dough a special effect that you will love.
When you make this recipe at home, you can use any fish you like. Long John Silver’s uses Alaskan cod caught in the wild. I made my recipe with cod that I bought from Costco. I used vegetable oil for frying. I used my T-fal FR8000 Oil Filtration Ultimate EZ Clean 3.5 Litre Frying Basket Stainless Steel Immersion Fryer, 2.6 lbs, Silver
. I like it because it regulates the heat very well and it has a filter that allows the oil to be reused. I think peanut oil would work just as well, but it is more expensive.
I have some tips on the technique. Make sure your fish pieces are no larger than 3 ounces; when the fish is heavier, it immediately sinks into the oil and the batter can wrap around the heating elements of your fryer. If you simply use a pot to heat the oil, this is not a problem. I like to raise and lower the breaded fish pieces several times when I dip them into the oil, this way the dough can cook just a little, and the expansion of the dough is less troublesome. It’s not difficult at all, but the dough expands during baking, which is one of the features that make this dough so unique.
I hope you enjoy one of my childhood favorites. You could use this same dough to dip chicken tenders, shrimp and even onion rings. You can also serve this recipe with a tartar sauce.

1 1/2 cups of hot water
