I love muffins, especially this particular recipe! This has become my comfort food. I constantly crave for it that’s why I bake it all the time. It’s very easy to make so I am sure that you can do it. Feel free to add more ingredients if you prefer. Enjoy!
Ingredients:
½ cup butter
1 ¼ cups white sugar
1 teaspoon vanilla extract
½ teaspoon salt
2 large eggs
1 ¾ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon ground cinnamon
½ cup milk
2 cups peeled, cored, and sliced apples
½ cup walnuts
¼ cup white sugar
½ teaspoon ground cinnamon
3 tablespoons all-purpose flour
2 tablespoons butter, cubed
Directions:
Step 1: Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Step 2: Apply cooking spray or line a jumbo muffin pan.
Step 3: In a large mixing bowl, add 1 1/4 cups sugar, 1/2 cup butter, vanilla, and salt. Beat until creamy.
Step 4: Add eggs one at a time and beat every addition.
Step 5: In a small mixing bowl, add baking powder, 1/2 teaspoon cinnamon, 1 3/4 cups of flour. Whisk until well mixed. Transfer the mixture into the batter and pour in milk gradually. Add walnuts and apples.
Step 6: In a small mixing bowl, add 1/2 teaspoon of cinnamon, 3 tablespoons all-purpose flour, 2 tablespoons cubed butter, and 1/4 cup white sugar. Use a pastry blender to mix.
Step 7: Sprinkle cinnamon crumble on top of the batter.
Step 8: Place inside the preheated oven and bake for 30 minutes or until the colour turns golden brown and until a toothpick comes out clean after inserting int the middle.
Step 9: Remove from the oven and let it sit on a wire rack to cool at room temperature.
Step 10: Serve and enjoy!
Note:
You can use toasted walnuts in the batter and topping.
