You won’t believe how much flavor this broccoli and grape salad has under the hood! In fact, it’s so good, you’ll have a hard time believing it’s good for you too! And broccoli may very well become your new favorite vegetable.
So, today I’m sharing another salad recipe with you…. I seem to be making a lot of them lately. But this one? You’re probably going to want to marry me for this. Well, okay, maybe not marry me, but make me your best friend in the whole wide world for the rest of your life!
Because really, this salad, it’s so good, it almost tastes like candy! It has so many flavors that your taste buds are going to be bombarded with all kinds of sweet, tart, salty, smoky, crunchy, nutty and everything in between!
INGREDIENTS
2 large broccoli crowns, cut into small florets (about 4 cups)
1 large green apple, diced
1 cup green grapes, cut into 2-3 pieces
1 cup red grapes, cut into 2-3 pieces
3 green onions, sliced
1/2 cup chopped toasted almonds*.
1/2 cup sliced green olives
4-6 slices crisp bacon, optional
For the dressing
2 cloves garlic, minced
1/2 cup mayonnaise
1/4 cup lime juice
3 tablespoons unpasteurized honey
2 tablespoons Dijon mustard
1 tablespoon fresh rosemary, chopped
1/2 teaspoon salt, I use Himalayan salt
1/2 teaspoon ground black pepper
INSTRUCTIONS
In a large bowl, combine broccoli florets, green apple, green and red grapes, green onion, toasted almonds and green olives; set aside.
In a separate container, combine all dressing ingredients and whisk until smooth and creamy. Pour over reserved salad and toss well. Break bacon slices into small pieces and sprinkle over salad, if desired.
Serve immediately or leave in the refrigerator for a few hours to allow the flavours to develop.
This salad can be stored in the refrigerator for 3 to 4 days in an airtight container.
Looks awesome Thanks
Just wondering why it show cucumbers, celery and sunflower seeds but the recipe doesn’t have any of those ingredients in it.
I agree. I was wondering the same thing.
In the title it says sunflower seeds and cranberries however they aren’t mentioned in the recipe!
