Chicken Bacon Ranch Tater Tot Casserole


This Tater Tot Ranch Chicken and Bacon casserole is a family favourite. It’s made with chicken, bacon, cheese and a delicious creamy ranch sauce that everyone will love!

You can’t go wrong with this chicken and bacon recipe for the whole family. It’s an easy recipe to make, especially on busy nights when you don’t have much time to cook. The ingredients are simple and you probably already have some at home.

This recipe is also a great way to use leftover chicken if you overcooked the night before. It’s one of my family’s favourite dishes, which usually has no leftovers, and it’s a mom’s favourite recipe to save time.

Ingredients

6 slices of cooked bacon or you can use bacon in the microwave

4 cooked and grated chicken breasts

Bag of 32 ounces of frozen tater tots

1/2 cup ranch dressing

1 cup of milk

2 tablespoons all-purpose flour

3 tablespoons of butter

1 1/2 cups grated mild cheddar cheese

salt and pepper to taste

 

Instructions

Preheat the oven to 425 degrees.

Cook the chicken in a separate pan until cooked. Let the chicken cool for a few minutes and shred with a blender.

In a small saucepan, melt the butter over low heat, add the flour while whisking and season with salt and pepper to taste.

Whisk the milk into the mixture in the saucepan, pouring slowly a little at a time. Mix until creamy and add the ranch dressing and toss.

Spray a 9×13 baking dish and add a layer of chicken, then sauce, then half of the cheese, then toast and bake for 20 minutes uncovered.

Crumble the cooked bacon while waiting for the dish to cook and set aside.

Make sure the tater tots are golden brown and crispy, then cover the pan with the remaining cheese and crumbled bacon. Cook for another 5 minutes or until cheese is melted and bubbling.

Remove from the oven and let cool for a few minutes, then enjoy!
