These baked broccoli patties with cheese are a great, healthy and delicious side dish for dinner. Another great way to get kids to eat veggies (see also crispy baked zucchini sticks). This recipe is a must try!
This is where I want to insert a wicked laugh. This week, I had a house full of kids and I fed them doughnuts of all kinds – without any of them realizing the audacity I was committing by feeding them vegetables. Without their knowledge or consent. To fool them, we simply called them “Shrek Pancakes”. Do I insert an evil laugh now?
That’s when I realized that I had disappointed you by not sharing my doughnut recipes with you. So I offer you this recipe as a peace offering, and I ask for your forgiveness.
Crispy on the outside and soft on the inside, these donuts are extremely easy to make. If you have a deep love affair with your food processor, then you will love these. Throwing ingredients into a food processor is probably the easiest method of cooking that anyone could ask for. ‘Us’ being the people who don’t have time to prepare things in advance.
Plus, having your oven do all the work while you’re busy chasing after the little ones is a huge bonus.
Ingredients:
2 teaspoons vegetable oil
2 cloves garlic – minced
1/2 onion – chopped
1 bag frozen broccoli (12 oz) – thawed
3/4 cup panko breadcrumbs
1/2 cup sharp cheddar cheese
1/3 cup parmesan cheese
2 eggs – beaten
salt/pepper
Instructions:
Preheat oven to 400 degrees. Lightly grease a foil-lined baking sheet.
Heat oil in a small skillet over medium heat, add garlic and onions. Season with salt and pepper to taste. Sauté until onions and garlic are soft, then set aside to cool.
Place broccoli in a kitchen towel. Wrap the cloth around the broccoli and squeeze out the excess moisture. Pour the drained broccoli into a large bowl.
In the same bowl, add the panko, cheeses, eggs and salt/pepper to taste.
Mix together and form into patties, place on prepared baking sheet.
Bake in preheated oven for 15 minutes. Flip them over and bake for another 15 minutes or until golden brown and crispy.
