The best steak for fajitas
Classically Tex Mex, fajitas (pronounced fah-hee-tas) are usually made with grilled steak strips, onions and peppers, and served hot with fresh tortillas, guacamole, sour cream and salsa.
You can make fajitas with steak or chicken, or even make them vegetarian. Here is a quick and easy recipe for steak fajitas.
Skirt steak, thinly sliced against the grain.
Peppers, thinly sliced
Onions, thinly sliced
Taco seasoning; homemade or store bought
Slice your beef skirt steak thinly and against the grain.
Slice the peppers and onions equally thin.
In a heavy skillet, heat 2 tablespoons of oil and add the beef skirt steak, stirring occasionally until it is almost done.
Remove the meat from the pan.
Add 1 tablespoon of oil and 1 tablespoon of butter to the pan.
Add the peppers and onions to the pan.
Let the peppers and onions cook slowly.
Once the peppers and onions are cooked, return the skirt steak to the pan.
Sprinkle the peppers, onions and steak with the taco seasoning and a few shots of Worchestire sauce.
Cook for a few more minutes until everything is well combined.
Serve over rice or wrapped in flour tortillas, topped with fresh salsa and sour cream.
