Ooey Gooey Bars

A few months ago, my family went to visit my grandparents in California. It had been a while since we had been there and I didn’t feel like spending time with them anymore. Yes, it is this same grandmother who provides many of the delicious recipes in this blog, taken from her incredible cookbook that she made and compiled from the recipes she has had since her first marriage.

While we were there, she made these bars for one of the desserts. I couldn’t stop eating them! Partly because all I wanted with this pregnancy was sugar and sweets. I asked her for the recipe and she told me that it had been in the cookbook all these years and I had just forgotten about it. It’s so easy to make and it’s the perfect combination of sweets and delicious sweets! Believe me, you have to make them!

Ingredients

CRUST :
1 can of yellow cake mix, dry – unprepared
8 tablespoons of melted butter
1 egg
THE GOOEY DIAPER :
8 oz cream cheese, softened
2 eggs, beaten
16 oz. powdered sugar

Instructions

Preheat the oven to 350 degrees F.
In a medium bowl, mix the cake mix, melted butter and egg. Mix until smooth and well combined.
Pat and press the dough evenly onto the bottom of a greased 9Γ—13 pan. Set aside.
In a large separate bowl, beat and cream the cream cheese. Add the eggs and beat until smooth for a minute or two. Add powdered sugar and continue beating until well blended.
Pour over the crust and bake at 350 degrees F for about 25-30 minutes or until done. Do not overbake.
When baking is complete, remove from oven and cool completely before carving.
