Cookie bars must be one of my favorites. I’ve made so many different versions, like sugar cookie bars, congo cookie bars, Oreo cookie bars and many more. I must say this recipe is one of my favorites! I finally came up with them just in time for the holidays and believe me, you want to make them. They are so delicious!

INGREDIENTS

1 cup unsalted butter (at room temperature)

1 cup light brown sugar

3/4 cup granulated sugar

2 large eggs

2 teaspoons of vanilla

3 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon of salt

1 cup chocolate chips (and more for the tops if desired)

1 cup of M&M’s (more for tops if desired)

INSTRUCTIONS

Preheat oven to 325°F. For thick bars, line a 9×13″ baking pan with aluminum foil. For thinner bars, cover a 15×10″ pan. Leave some excess for easy removal. Then spray with a non-stick spray.

In a large bowl, using a mixer, cream the butter and sugars for 1 minute. Add the eggs and vanilla and mix until well blended.

Add flour, baking soda and salt and stir until well blended. Add the chocolate chips and M&M’s (keeping about 1/4 cup for the top).

Put the cookie dough in the pan. Place additional M&M’s and chocolate chips on top.

Bake for 30 to 35 minutes, or until the top is barely browned. Let cool completely, then remove and slice.

Store in an airtight container for up to 3 days.
