I love salmon pancakes. I always have. My MawMaw Light knew how much I loved them, and every time I went to see her when I was little – she always had a foil pie plate waiting for me in her toaster oven – it was filled to the brim with her homemade salmon patties, fried okra and fried squash. The first thing I would do when I got home was hug her and my friend PawPaw and then I would go straight to the kitchen to take out my waiting plate and enjoy. In fact, I don’t remember a single time I came to visit her without having a plate of her salmon, okra and squash patties waiting for me. Oh, what a memory! A delicious memory at that!
MawMaw doesn’t cook as much anymore, but I’ll always have fond memories of those little aluminum foil pie plates filled with some of my favourite foods just waiting for me. She gave me her recipe many years ago after I got married, and it is still the only way I make my salmon patties today.
I always keep salmon in my pantry for that purpose. Having a can of salmon on hand makes it easier to prepare a tasty home-cooked meal. It’s homemade, it’s easy!
