Butter Swim Biscuits


Cookies that swim in butter? Yes, please.
This is good food! I could eat one of these butter cookies every day for breakfast, lunch and dinner and be perfectly satisfied for the rest of my life. You wouldn’t believe how good they are with a little jam or jelly spread on top.

BONUS: This recipe is surprisingly quick and easy, and with the exception of the buttermilk, it contains super simple ingredients that you probably already have on hand.

This simple homemade recipe is to die for! The butter makes these cookies soft and fluffy on the inside, with a flaky crust on the outside. Add a little jam or jelly, and you have paradise.

Ingredients

2 1/2 cups all-purpose flour

2 cups of buttermilk

1 stick of butter

4 teaspoons of baking yeast

4 teaspoons of sugar

2 teaspoons of salt

 

Instructions

Preheat the oven to 450 degrees.

Mix all dry ingredients in a medium bowl.

Then add the buttermilk and mix all the ingredients until you get a moist dough.

Melt the butter in a microwave-safe bowl and pour it into an 8×8 or 9×9 baking dish (make sure your pan is not too small or shallow so that the butter does not drip during cooking).

Place the batter on top of the melted butter and use a spatula to spread it evenly in the pan until it touches the sides.

Cut the uncooked dough (it should swim in the butter at this point) into 9 regular squares.

Bake for 20-25 minutes or until the top is golden brown.

Enjoy for breakfast, lunch or dinner! These cookies are the perfect companion to any meal. I prefer to eat them with raspberry jam. 🙂
